The Cast Of Characters

The Man (of the House): The love of my life. Severely addicted to books (that take up WAYYYY too much space in our house) and raw garlic. We've been married 13 years, but involved for many more. Long story....

Our Kids:
SC:  Age 13. Book addicted like both her parents. Serious, but with a nice sense of humor. Well mannered in the eyes of the world, but at home,it can be another story(!)

JR: Age 9  I think of her as a Disney Princess's evil twin. All the eccentricity of both sides of the family wrapped up in a sweet little body and an adorable smile. People find her a darling. I do too, but I also find her exhausting!

The Beasts: Our 2 cats, both adopted from animal rescue. "Bart" is a big, solid black, total teddy bear of a cat. Our brown tabby queeen "Bella" is  in love with The Man, though she seems to like me too!

Me: Children's librarian by day, tired keeper of all of the above by night. When I think of my life, I think of Nicole Hollander (Sylvia)'s immortal line about things that are easier than combining a family and a career. Like swimming the Amazon covered in peanut butter....

Yet Another Way to Use Your Pesto--And Your Zucchini Too!

Kids don't eat veggies?

SC ate TWO bowls of this, topped with melted mozzarella cheese for dinner Monday night.And she is NOT generally a fan of cooked vegetables!

This comes via Myron of Yahoo's Slow Cooker Group. He is a terrific cook and an all around nice guy, even if he does tend to talk about the fact that he is living and cooking at the beach in the middle of the winter, which is enough to make some of us want to throw Internet snowballs at him....

If you are a gardener, this is a great way to use some of those zucchini. The slightly oversized ones you pick out of your garden a bit too late will be fine in this because they cook for such a long time. I used one large zucchini in place of two small ones this time since (hooray!) I actually HAVE zucchini this year.

Instead of adding the herbs, I stir a spoonful or two of pesto into this at the end. You could also just add some fresh herbs at the end--dry herbs will not add much zip to this.

I also like to serve crusty bread with this--great for dipping up the sauce. Enjoy!

Myron's Ratatouille

  • 1 Jar spaghetti sauce
  • 1 Eggplant, chopped (peeled)
  • 2 Tomatoes, chopped coarse
  • 2 small Zucchini, sliced
  • 1 Green bell pepper in 1" pieces
  • 1 large Onion, chopped
  • 3 Cloves garlic minced
  • 1 teaspoon basil leaves
  • 1 teaspoon oregano
  • (red pepper flakes, to taste)
